- 1-1/2 cups white urad dal (soaked overnight)
- 2 onions, finely chopped
- 3 green chillies, finely chopped
- 1-1/2 teaspoons semolina

Instructions:
- Begin by draining the soaked urad dal and grind it in a food processor, adding just enough water to create a smooth, thick batter. Be sure not to grind it too fine—leave some texture. Transfer the mixture to a bowl.
- Add the finely chopped onions, green chillies, semolina, and salt to the batter. Stir well to combine.
- Heat a paniyaram pan on medium heat. Add a small amount of oil to each cavity of the pan.
- Carefully spoon the dal mixture into each cavity, pressing gently to shape the vadas. Allow them to cook for about 2 minutes on one side.
- Flip the vadas and cook for an additional 2-3 minutes, until both sides are golden brown and crispy.
- Remove the vadas from the pan and drain excess oil on a paper towel.
Serve these crispy Bengali-style Urad Dal Vadas with a side of fresh coriander mint chutney and a steaming cup of masala tea for a delightful snack. Enjoy!
