Bengali Style Urad Dal Vada

Ingredients:

  • 1-1/2 cups white urad dal (soaked overnight)
  • 2 onions, finely chopped
  • 3 green chillies, finely chopped
  • 1-1/2 teaspoons semolina
  • Salt, to taste
  • Oil, for cooking

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Instructions:

  1. Begin by draining the soaked urad dal and grind it in a food processor, adding just enough water to create a smooth, thick batter. Be sure not to grind it too fine—leave some texture. Transfer the mixture to a bowl.
  2. Add the finely chopped onions, green chillies, semolina, and salt to the batter. Stir well to combine.
  3. Heat a paniyaram pan on medium heat. Add a small amount of oil to each cavity of the pan.
  4. Carefully spoon the dal mixture into each cavity, pressing gently to shape the vadas. Allow them to cook for about 2 minutes on one side.
  5. Flip the vadas and cook for an additional 2-3 minutes, until both sides are golden brown and crispy.
  6. Remove the vadas from the pan and drain excess oil on a paper towel.

Serve these crispy Bengali-style Urad Dal Vadas with a side of fresh coriander mint chutney and a steaming cup of masala tea for a delightful snack. Enjoy!
