Bitter Gourd Chips Recipe

Who doesn’t love chips? While many may not immediately think of bitter gourd as a snack, these crispy bitter gourd chips are absolutely delicious and surprisingly not bitter! Once you try them, you’ll be hooked, and this unique version of bitter gourd will become your favorite snack. Perfect for those looking to enjoy a healthy yet tasty treat!

Ingredients:

  • 1 Karela (Bitter Gourd/ Pavakkai)
  • 1 tablespoon Rice flour
  • 1 tablespoon Gram flour (besan)
  • 3/4 tablespoon Corn flour
  • 1 teaspoon Coriander Powder (Dhania)
  • 1/2 teaspoon Cumin powder (Jeera)
  • 1/2 teaspoon Fennel seeds (Saunf), slightly crushed
  • 1/4 teaspoon Raw Mango powder
  • 1 teaspoon Red Chilli powder
  • 1/2 teaspoon Turmeric powder (Haldi)
  • Salt to taste
  • Oil for deep frying

Preparation Time: 10 minutes
Cooking Time: 10 minutes

Instructions:

  1. Wash and pat dry the bitter gourd. Trim the ends and slice it thinly (the slices should be neither too thick nor too thin). There’s no need to remove the seeds.
  2. In a bowl, add the rice flour, gram flour, corn flour, and all the spice powders. Mix well.
  3. Add the bitter gourd slices to the flour and spice mixture. Toss to coat all slices evenly. If necessary, sprinkle a few drops of water or, alternatively, add 1-2 teaspoons of hot oil to help coat the gourd slices without making them soggy.
  4. Heat oil in a deep pan or kadai for frying. Once the oil is hot, add the coated bitter gourd slices one by one, in batches, without overcrowding the pan.
  5. Fry on medium-low heat until the slices turn crispy and golden brown on both sides.
  6. Once fried, remove the chips from the oil and drain excess oil by placing them on a paper towel.
  7. Repeat the frying process with the remaining slices.

Serve the crispy bitter gourd chips as a tea-time snack, and enjoy them alongside some hot masala tea and baked namak masala para for the perfect pairing!
