Recipe Instructions:

  1. Peel and cut brinjals and potatoes into finger-sized pieces.
  2. In a mixing bowl, combine refined flour, cornflour, salt, black pepper, dark soy sauce, and a little water to form a batter.
  3. Heat oil in a wok or deep frying pan.
  4. Dip the brinjal fingers in the batter and deep-fry until golden brown. Drain and set aside.
  5. Parboil the potato fingers, then dip them in the flour batter and deep-fry until crispy. Drain and set aside.
  6. Halve, de-seed, and cut the capsicums and tomatoes into strips.
  7. Peel and finely chop the garlic, green chilies, and spring onions.
  8. In the same wok, heat oil and sauté garlic for a minute.
  9. Add tomato ketchup, soy sauce, green chilies, green chili sauce, ajinomoto, salt, and pepper powder. Mix well, add a little water, and simmer for a while.
  10. Add the fried brinjal and potato fingers, and cook on high heat for some time.
  11. Dissolve a little cornflour in water and add to the mixture.
  12. Incorporate capsicum, tomato strips, and green onions. Mix well.
  13. Add vinegar, stir, and remove from heat.
  14. Serve immediately with hot roti for a delightful meal experience.
