Recipe Instructions:
- Peel and cut brinjals and potatoes into finger-sized pieces.
- In a mixing bowl, combine refined flour, cornflour, salt, black pepper, dark soy sauce, and a little water to form a batter.
- Heat oil in a wok or deep frying pan.
- Dip the brinjal fingers in the batter and deep-fry until golden brown. Drain and set aside.
- Parboil the potato fingers, then dip them in the flour batter and deep-fry until crispy. Drain and set aside.
- Halve, de-seed, and cut the capsicums and tomatoes into strips.
- Peel and finely chop the garlic, green chilies, and spring onions.
- In the same wok, heat oil and sauté garlic for a minute.
- Add tomato ketchup, soy sauce, green chilies, green chili sauce, ajinomoto, salt, and pepper powder. Mix well, add a little water, and simmer for a while.
- Add the fried brinjal and potato fingers, and cook on high heat for some time.
- Dissolve a little cornflour in water and add to the mixture.
- Incorporate capsicum, tomato strips, and green onions. Mix well.
- Add vinegar, stir, and remove from heat.
