Crispy Kentucky-Style Fried Chicken Recipe

Ingredients:

  • 1 whole free-range chicken, cut into 8 pieces
  • 300 grams all-purpose flour
  • 100 grams cornstarch
  • 4 cloves of garlic, minced (or garlic powder)
  • 1 teaspoon baking powder
  • Salt
  • Ground white pepper
  • Freshly ground black pepper
  • Ground coriander
  • Chicken stock powder
  • Chili powder
  • 1 egg
  • 1 packet of powdered milk (such as Dancow)
  • 1 tablespoon vinegar or lemon juice
  • 150 ml warm water

Steps:

  1. Marinate the Chicken:

    • Season the chicken with 1 tablespoon of salt, 1 tablespoon of white pepper, black pepper, 1 teaspoon of chicken stock powder, minced garlic, 1 tablespoon of ground coriander, and 1 tablespoon of chili powder.
  2. Prepare the Buttermilk Bath:

    • Mix Dancow powdered milk with 250 ml of warm water. Add vinegar or lemon juice, stir until small clumps form in the milk.
  3. Coat the Chicken:

    • Crack an egg into the buttermilk mixture, beat well, and add baking powder.
    • Dip the marinated chicken pieces into the buttermilk and egg mixture, ensuring they are fully coated.
  4. Chill and Marinate:

    • Refrigerate the chicken for at least 12 hours. The longer you marinate, the more flavorful and juicy the chicken will be.
  5. Prepare the Coating:

    • In a separate bowl, mix together the all-purpose flour and cornstarch.
    • Add salt, chicken stock powder, white pepper, ground coriander, and chili powder (each 1 teaspoon), and blend until well combined.
  6. Coat the Chicken Again:

    • Remove the chicken from the buttermilk marinade and dredge each piece thoroughly in the seasoned flour mixture. Ensure each piece is evenly coated without pressing too firmly, to maintain a light texture.
  7. Double Coating for Extra Crispiness:

    • Return the chicken to the buttermilk briefly, then coat again with the seasoned flour mixture. Make sure the flour adheres well to the chicken.
  8. Fry the Chicken:

    • Heat a generous amount of oil in a deep frying pan until hot.
    • Carefully place the coated chicken into the hot oil, ensuring each piece is fully submerged.
    • Fry over low heat for 12-14 minutes, turning occasionally, until the chicken is cooked through and golden brown.
  9. Serve:

    • Once golden and crispy, remove the chicken from the oil and drain on paper towels to remove excess oil.
    • Serve hot, garnished with your favorite sides or sauces.
