Kobiche Vade Recipe – Cabbage and Multigrain Fritters

Kobiche Vade is a delightful Indian snack made from finely chopped cabbage, a blend of multigrain flour, and aromatic spices. These crispy fritters are shallow fried to perfection and served hot with refreshing coriander-mint chutney and a cup of masala chai. A perfect choice for a teatime snack, these fritters combine the wholesomeness of vegetables with the earthy flavors of traditional spices.

Coriander leaves (Dhania) Handful
Lemon juice 1 teaspoon
Salt To taste

Instructions:

  1. Prepare the Spice Paste:
    Start by grinding the green chillies, ginger, cumin seeds, and garlic into a smooth paste using a blender or a mortar and pestle. This will infuse the fritters with a vibrant and aromatic flavor.

  2. Prepare the Batter:
    In a large mixing bowl, combine all the ingredients: finely chopped cabbage, multigrain flour, gram flour (besan), rice flour, ground spice paste, ajwain, coriander leaves, lemon juice, and salt. Gradually add a little water, stirring continuously, until the mixture forms a thick batter that is just right for dropping consistency.

  3. Cook the Fritters:
    Heat a non-stick Appam (appe) pan over medium heat. Drizzle some sunflower oil into each of the cavities. Once the oil is hot, drop about 2 tablespoons of the batter into each cavity of the pan.

  4. Fry the Kobiche Vade:
    Cover the pan with a lid and cook on low heat for about 5-7 minutes, or until the fritters turn golden brown on the bottom. Using a wooden skewer, gently flip each fritter over and cook for an additional 2-3 minutes, or until both sides are golden brown and crisp.

  5. Serve and Enjoy:
    Once the Kobiche Vade is golden and crispy on all sides, remove them from the pan. Serve these savory cabbage and multigrain fritters hot with a side of fresh coriander-mint chutney (Dhaniya Pudina Chutney) and a warm cup of masala chai for the ultimate Indian snack experience.
