Introduction:
Kobiche Vade, also known as Cabbage Fritters, is an irresistible snack that combines the wholesome goodness of cabbage, multigrain flour, and a mix of aromatic spices. These fritters are shallow-fried in an Appe Patra (also called an appam pan) to achieve a crispy exterior while retaining a soft, flavorful interior. The vade can be made with a variety of flours, including multigrain flour, thalipeeth bhajani, or even just chickpea and rice flour. For a healthier version, you can opt for an air fryer or deep fry them. Instructions

  1. Grind Spices and Aromatics:
Begin by grinding the green chilies, ginger, cumin seeds, and garlic together. You can use a blender or a mortar and pestle for this step. The goal is to create a smooth paste that will infuse the batter with aromatic flavors.

  2. Prepare the Batter:
In a large mixing bowl, combine all the dry ingredients and flavorings: finely chopped cabbage, multigrain flour, gram flour (besan), rice flour, the ground green chili-ginger-garlic mixture, ajwain (carom seeds), coriander leaves, lemon juice, and salt. Add a little water, mixing it slowly, to form a thick batter that is just firm enough to hold its shape when dropped into the pan.

  3. Heat the Appam Pan:
Heat a non-stick Appam pan (also called an Appe Patra) on a low flame. Drizzle a little oil into each cavity of the pan to ensure that the vade cook evenly and become golden brown.

  4. Cook the Vade:
Take about 2 tablespoons of the batter and drop it into each cavity of the Appam pan. Be sure not to overcrowd the pan. Cover the pan with a lid and cook on a low flame for 4-5 minutes, until the vade are golden brown on the bottom.

  5. Flip the Vade:
Once the vade have browned on the bottom, carefully turn them over using a wooden skewer or spoon. Cook for an additional 2-3 minutes until all sides are evenly browned and crisp.

  6. Serving Suggestions:
Serve the Kobiche Vade hot with a refreshing Dhaniya Pudina Chutney or your favorite dipping sauce. For an even more delightful experience, pair them with a steaming cup of Masala Chai.

Tips for the Best Kobiche Vade:

  • Cabbage Preparation: Make sure to chop the cabbage finely and squeeze out any excess water. This helps prevent the batter from becoming too watery.
  • Air Fryer Option: If you prefer a healthier version, you can place the prepared vade in an air fryer. Set the temperature to 180°C (350°F) and cook for 10-12 minutes, flipping halfway through.
  • Flour Alternatives: While multigrain flour is ideal for a nutritious option, feel free to experiment with thalipeeth bhajani flour or just chickpea and rice flour. Each variation adds a different texture and flavor to the fritters.

Variations to Explore:

  • Add Vegetables: You can experiment with adding finely chopped carrots, peas, or spinach to the batter for added nutrition and color.
  • Spice Level: Adjust the spice level by increasing or decreasing the number of green chilies according to your preference.
  • Gravy Option: For a more substantial meal, drop these fritters into a tangy onion-tomato gravy to create a hearty Kobi Kofta Curry.

Kobiche Vade is a fantastic choice for any occasion—whether you’re craving a quick snack or looking to impress your guests with a unique and flavorful dish. The crisp texture and delightful flavors of cabbage, mixed with the richness of multigrain flour and spices, make it a treat for all ages. Enjoy!
