Caramelized Chicken Fillet à la Lila’s Kitchen

Ingredients:

  • 1/4 kg chicken (bone-in, cut into small pieces, thinly sliced)
  • Enough cornstarch for coating (for crispy chicken)
  • 3 cloves garlic + 1 tsp black pepper + salt (ground/blended)
  • 4 shallots (a)
  • 3 cloves garlic (a)
  • Fresh chilies (not too soft) (a)
  • 1 stalk lemongrass (b)
  • 5 kaffir lime leaves (b)
  • Sweet soy sauce (kecap manis)
  • 3 tbsp sliced ​​red sugar – sliced
  • Salt
  • Royco

Instructions:

  1. Marinate the Chicken: Combine the cleaned raw chicken with the ground seasoning (garlic + black pepper + salt) without water. Let it sit for about 30 minutes.

  2. Prepare the Chicken: Heat cooking oil while coating the chicken with cornstarch (without water). Fry the chicken over low heat until it’s thoroughly cooked and crispy enough to last.

  3. Prepare the Sauce: Roughly blend all ingredients (a) and thinly slice (b) lengthwise. Sauté ingredients (a) and (b) until fragrant. Add sliced ​​red sugar, salt, Royco, and finally add sweet soy sauce. Stir until the seasoning is evenly mixed (don’t overcook as the caramel can harden). Taste and adjust seasoning if necessary.

  4. Combine and Serve: Add the fried crispy chicken to the sauce. Stir briefly until well coated, then remove from heat and serve immediately.
