Caramelized Fried Fruit

Category: Desserts
Servings: 38 pieces

Ingredients

Ingredient Quantity
Apples 2
Pears 2
Bananas 2
Lemon juice 1 tbsp
Eggs 2
All-purpose flour (00) 150g
Fine salt 1 pinch
Water 200ml
Baking powder 1 tsp
Sugar 500g
Water (for caramel) As needed
Seed oil (for frying) As needed

Instructions

  1. Prepare the Fruit
Start by washing and peeling the apples, pears, and bananas. Cut the apples and pears into quarters, removing the cores, then cut each quarter in half to create eight pieces for each fruit. Slice the bananas into three even pieces.
Transfer the fruit into a large bowl and toss with lemon juice to prevent oxidation and browning. Set aside.

  2. Make the Batter
Separate the egg yolks from the egg whites. In a mixing bowl, whisk the yolks with water until smooth. Beat the mixture well with a whisk to avoid lumps.
In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the beaten egg whites into the egg yolk mixture.

  3. Fry the Fruit
In a large pot or frying pan, heat the seed oil over medium heat. The oil should be hot enough to fry but not smoking.
Dip each piece of fruit into the prepared batter, ensuring it is fully coated. Carefully lower the battered fruit into the hot oil and fry until the batter turns golden brown and crispy. Remove the fruit from the oil and drain excess oil on paper towels.

  4. Prepare the Caramel
In a saucepan, combine sugar and a small amount of water. Heat the mixture over medium-high heat until the sugar dissolves and begins to turn golden brown. Stir occasionally, but do not overheat, as the sugar can burn quickly.

  5. Caramelize the Fruit
Once the caramel is ready, insert a toothpick into each piece of fried fruit. Quickly dip the fruit into the caramel, coating it evenly. Allow any excess caramel to drip off.
Prepare a bowl of ice-cold water. After dipping the fruit in the caramel, quickly immerse it in the cold water to harden the caramel and create a crispy, sweet shell around the fruit.

  6. Serve
Arrange the caramelized fried fruit on a serving platter. Allow it to cool slightly before serving. Enjoy this delightful, crispy, and sweet treat!

Tips:

  • For extra flavor, feel free to experiment with other fruits like pineapples or peaches.
  • You can add a dash of cinnamon to the batter for a warm, comforting taste.
