Caribbean Vegetable Patties Recipe (Hand Pie)

Description
Caribbean Vegetable Patties are savory hand pies with a crisp, golden crust, shaped like a half-moon. These flavorful pastries are filled with a spicy and aromatic mixture of mixed vegetables, cabbage, bell peppers, tomatoes, onions, and an exciting blend of Caribbean spices. Think of them as a combination of Indian savory karanji or calzone, but with a uniquely tropical twist. While this vegetarian version uses a medley of mixed veggies, you can easily swap them for a non-vegetarian filling for an even heartier treat.

Perfect as a snack, these patties are flavorful, filling, and a great way to indulge in vibrant Caribbean cuisine from the comfort of your home. Serve them as an appetizer, snack, or alongside a fresh salad for a light yet satisfying meal.

Instructions

  1. Prepare the Crust
Begin by preparing the dough for the crust. In a large mixing bowl, sift together the all-purpose flour, salt, turmeric powder, and curry powder. This step ensures that all the dry ingredients are evenly distributed.

Next, cut the salted butter into small cubes and add them to the flour mixture. Using your fingertips or a pastry cutter, work the butter into the flour until it resembles coarse crumbs.

  2. Form the Dough
Make a well in the center of the flour mixture and pour in the chilled water. Gently mix everything together to form a dough. Be careful not to overwork the dough. Once combined, wrap the dough in cling film and refrigerate it for about 1 hour. This resting period helps the dough relax and makes it easier to roll out later.

  3. Prepare the Stuffing
While the dough is chilling, prepare the stuffing for the patties. Heat the coconut oil in a skillet over medium heat. Add the chopped onions, ginger garlic paste, and cook until the onions are soft and translucent, about 5 minutes.

Add the mixed vegetables, cabbage, bell pepper, and tomato to the skillet. Stir well and cook until the vegetables become tender and any excess moisture evaporates. Season with salt, paprika powder, all spice powder, nutmeg, and cinnamon. Cook for a few more minutes to allow the spices to fully combine with the vegetables. Remove from heat and let the mixture cool to room temperature.

  4. Assemble the Patties
After the dough has rested, remove it from the fridge and divide it into equal portions, around 10-12 balls. Roll each ball into a 6-inch circle on a lightly floured surface.

Brush a little water along the edge of each circle. Spoon about 2-3 tablespoons of the cooled vegetable filling into the center of each dough circle. Fold the dough over the filling to create a half-moon shape, and crimp the edges together using a fork to seal the edges tightly. Pierce the top of each patty gently with the fork to allow steam to escape while baking.

  5. Bake the Patties
Preheat your oven to 215°C (425°F). Place the assembled patties on a lightly oiled baking sheet, ensuring that they are not touching each other. Optionally, brush the tops of the patties with a little melted butter for a golden finish.

Bake in the preheated oven for 25-30 minutes, or until the patties turn golden brown and crispy. Once done, remove from the oven and allow them to cool slightly before serving.

  6. Serve and Enjoy
These Caribbean Vegetable Patties are best served hot. Pair them with a tangy dipping sauce or enjoy them as they are for a satisfying snack. They are perfect for any occasion, whether it’s a casual snack or part of a larger meal.

Tips for Success:

  • Customize the Filling: While this recipe uses mixed vegetables, feel free to experiment with other fillings like spiced chicken, beef, or even fish for a non-vegetarian version of the patties.

  • Ensure the Dough is Chilled: Chilled dough is much easier to handle and will result in a flakier crust.

  • Serve with Sauce: Pair these patties with a spicy dip or chutney for an added layer of flavor.

Caribbean Vegetable Patties are a delicious and crispy snack, bursting with the rich, vibrant flavors of the Caribbean. They make for the perfect finger food at parties, or a quick snack for any time of the day.
