Instructions:

  1. Prepare the Dough: In a large bowl, sift the all-purpose flour. Add the eggs, a pinch of fine salt, and the orange zest. Mix the ingredients together until the dough starts to come together.

  2. Knead the Dough: Once the mixture becomes more compact, transfer it to a flat surface and briefly knead the dough until smooth.

  3. Roll Out the Dough: After kneading, use a rolling pin to roll out the dough into a thin sheet, approximately 1-2 mm in thickness.

  4. Rest the Dough: Carefully roll the dough into a log shape (10-11 cm in diameter), then let it rest in a cool place for 30 minutes to relax and firm up.

  5. Cut the Tagliatelle: After the resting period, take the rolled dough and cut it into slices about 1 cm thick to create your tagliatelle.

  6. Fry the Tagliatelle: Heat vegetable oil in a frying pan to around 170°C (338°F). Fry the tagliatelle in small batches to avoid lowering the oil temperature. Fry each batch until golden and crispy, then remove and drain on paper towels.

  7. Serve: While the tagliatelle is still warm, dust with powdered sugar. Serve immediately and enjoy these festive sweet treats!
