Instructions:

  1. Broil Catfish Fillets: Preheat your broiler and place the catfish fillets in a baking pan. Broil for 5-8 minutes or until the fish flakes easily. Once cooked, refrigerate the fillets until they are cooled.

  2. Flake Fish: Once the fish is cooled, flake it into a large mixing bowl using a fork or your fingers. Make sure there are no bones left in the flaked fish.

  3. Prepare Mixture: To the flaked fish, add eggs, peeled and grated potato, finely chopped onion, chopped fresh parsley, minced garlic, salt, pepper, and dried basil. Mix everything together until well combined.

  4. Shape Patties: Divide the mixture into 8 equal portions and shape each portion into a patty. Make sure to compact the mixture firmly to prevent the patties from falling apart during cooking.

  5. Coat with Cracker Crumbs: Coat each patty with cracker crumbs, pressing gently to ensure the crumbs adhere to the surface evenly.

  6. Heat Oil: In a large skillet, heat a small amount of oil over medium heat. You want enough oil to cover the bottom of the skillet.

  7. Cook Patties: Once the oil is hot, carefully place the patties in the skillet, making sure not to overcrowd them. Cook the patties in batches if necessary. Fry the patties for a few minutes on each side until they are golden brown and heated through.

  8. Serve: Once cooked, transfer the catfish cakes to a serving platter. Serve them hot with your choice of dipping sauce, such as tartar sauce or ketchup.

These Catfish Cakes are best enjoyed fresh off the skillet, crispy and piping hot. They make for a delicious appetizer, main course, or even as leftovers the next day. Experiment with different seasonings and dipping sauces to customize them to your taste. Whether you’re a seafood lover or looking to try something new, these catfish cakes are sure to please your palate.
