Instructions
To begin making the Chicken and Pea Croquettes, start by adding the rosemary and peas to a pot filled with cold water. Bring the water to a boil. Once it starts to simmer, add the chicken breast and cook until it is fully cooked through. Remove the chicken and set it aside to cool slightly.
After the chicken cools, place it on a cutting board and chop it into smaller pieces. Transfer these pieces to a blender or food processor and pulse until the chicken is finely shredded.
Now, in the same bowl with the shredded chicken, add the leaves of thyme, discarding the stems. Add the parsley and the peas you previously set aside. Season the mixture with salt and pepper to taste.
Once all the ingredients are combined, form small croquettes by rolling the mixture into balls or logs. Dip each croquette into breadcrumbs to coat them evenly.
Heat a generous amount of peanut oil in a frying pan over medium-high heat. Once the oil reaches 180ยฐC (350ยฐF), gently drop a few croquettes into the pan at a time, making sure not to overcrowd the pan. Fry them for 3-4 minutes or until they are golden brown and crisp.
Remove the croquettes from the oil and drain them on a paper towel-lined plate to absorb any excess oil. Serve the Chicken and Pea Croquettes while they’re still hot and enjoy the crispy exterior and tender interior!
