Ingredients

For the Wrapper:

  • 3 tablespoons all-purpose flour
  • 2 tablespoons rice flour
  • 1 egg
  • 1 teaspoon salt
  • Water (as needed)

For the Filling:

  • 250 grams chicken breast, finely chopped
  • 3 carrots, peeled and finely chopped
  • 2 handfuls bean sprouts
  • 2 stalks green onions, finely sliced
  • A handful of fresh celery leaves, chopped
  • 1 teaspoon ground black pepper
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 tablespoon oyster sauce
  • 1 chicken bouillon cube (Royco)
  • Chicken broth (as needed)
  • Cooking oil (for frying)

Instructions

  1. Prepare the Wrapper:

    • In a mixing bowl, combine the all-purpose flour, rice flour, egg, and salt. Gradually add water while stirring until the batter is smooth and thick, with a consistency similar to heavy cream. Set aside.
  2. Make the Filling:

    • Chop the chicken breast into small pieces. Peel and finely chop the carrots. Slice the green onions and chop the celery leaves.
    • In a large skillet or wok, heat a little cooking oil over medium heat. Add the minced garlic, ground black pepper, and salt. Sauté until fragrant.
    • Add the chopped chicken and cook until it’s fully cooked and no longer pink.
    • Stir in the carrots and cook until they start to soften. Add the bean sprouts, green onions, and celery leaves.
    • Season with the oyster sauce and crumble in the chicken bouillon cube. Pour in a small amount of chicken broth to help cook the vegetables and keep the filling moist. Cook until the vegetables are tender and the mixture is well combined. Remove from heat and let it cool.
  3. Cook the Wrappers:

    • Heat a non-stick skillet or crepe pan over low heat. Lightly grease the pan if needed. Pour a small amount of the batter into the pan and spread it out evenly to form a thin, round layer. Cook until the edges start to lift and the surface looks set. Flip and cook the other side briefly. Remove and let it cool. Repeat with the remaining batter to make more wrappers.
  4. Assemble the Lumpia:

    • Place a cooked wrapper on a clean surface. Spoon some of the filling mixture onto one edge of the wrapper. Roll up the wrapper tightly, folding in the sides as you go to seal the filling inside. Use a little egg white to seal the edges.
    • Heat oil in a frying pan over medium heat. Fry the lumpia until they are golden brown and crispy on all sides. Remove and drain on paper towels.
  5. Serve:
