- 2 cloves garlic, minced
- 1 teaspoon ground black pepper
- Salt, to taste
-
For the Flour Coating:
- All-purpose flour, as needed
- Salt, to taste
- Water, as needed
-
For the Sauce:
- 2 tablespoons date syrup (or honey, if unavailable)
- 2 tablespoons tomato sauce
- 2 tablespoons oyster sauce
- 2 tablespoons sweet soy sauce (kecap manis)
- 1 cm fresh ginger, minced
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- Salt, to taste
- Chopped green onions, for garnish
Instructions:
-
Prepare the Chicken:
- Cut the chicken breast into bite-sized cubes. In a mixing bowl, combine the chicken with minced garlic, ground black pepper, and salt. Allow it to marinate for at least 1 hour to absorb the flavors.
-
Prepare the Flour Coating:
- While the chicken is marinating, prepare the flour coating. In one bowl, mix all-purpose flour with a pinch of salt and enough water to create a batter. In a separate bowl, place some additional all-purpose flour for dredging.
-
Coat and Fry the Chicken:
- After the chicken has finished marinating, coat each piece first in the batter, then dredge in the dry flour. Ensure each piece is evenly coated. Heat oil in a frying pan over medium heat. Fry the chicken pieces until golden brown and crispy, then drain on paper towels.
-
Prepare the Sauce:
- In a separate pan, heat a small amount of oil over medium heat. Sauté minced garlic, chopped onion, and minced ginger until fragrant and translucent.
- Add the date syrup (or honey), tomato sauce, oyster sauce, and sweet soy sauce. Stir well to combine all the ingredients and let the sauce simmer for a few minutes. Adjust the seasoning with salt to taste.
-
Combine and Serve:
- Add the fried chicken pieces to the sauce and gently toss until the chicken is evenly coated with the sauce.
- Garnish with chopped green onions before serving.
