Chicken Nugget Carrot Bites Recipe

This Chicken Nugget Carrot Bites recipe is a delightful twist on classic chicken nuggets, incorporating the sweetness of carrots and a crunchy coating for a nutritious and tasty treat. Perfect for both kids and adults, these homemade nuggets are easy to prepare and can be customized to suit your taste.

Ingredients:

  • 250 g Chicken Breast (fillet)
  • 2 Eggs
  • 200 g Carrots (grated using a cheese grater)
  • 2 tbsp All-Purpose Flour (Blue Key brand)
  • 2 cloves Garlic (small)
  • 1 small Shallot
  • 1/2 tsp Salt
  • 1/2 tsp Mushroom Stock Powder (NO MSG, child-friendly)
  • For Coating:
    • Breadcrumbs
    • All-Purpose Flour (for dipping, use enough to achieve the right consistency)

Instructions:

  1. Prepare the Chicken Mixture:

    • In a food processor, combine the chicken breast, eggs, garlic, shallot, salt, and mushroom stock powder. Blend until the mixture is smooth. If you don’t have a food processor, you can use a blender designed for making rice porridge or a similar appliance.
    • Transfer the smooth mixture to a mixing bowl.
  2. Incorporate Carrots:

    • Add the grated carrots to the chicken mixture. Stir well to ensure the carrots are evenly distributed throughout.
  3. Prepare for Steaming:

    • Grease a steaming tray or dish with a little vegetable oil. For extra convenience, line the tray with banana leaves if available.
    • Pour the chicken and carrot mixture into the prepared tray, smoothing it out into an even layer.
  4. Steam the Mixture:

    • Preheat your steamer. Place a clean cloth over the lid to catch any condensation and prevent it from dripping onto the mixture.
    • Steam the mixture for 30 minutes. Make sure the steamer is hot before you begin.
  5. Cool and Slice:

    • Once steamed, remove the tray from the steamer and let it cool. Once cooled, cut the steamed mixture into bite-sized pieces according to your preference.
  6. Coat the Nuggets:

    • Dip each piece into a bowl of flour to coat lightly. Then, dip them into a mixture of flour and water to create a thin batter. Finally, coat with breadcrumbs.
    • Arrange the coated nuggets on a tray and freeze them briefly to help the coating adhere better.
  7. Cooking:

    • When ready to serve, you can either fry or bake the nuggets. To fry, heat oil in a pan over medium heat and cook the nuggets until golden and crispy. To bake, preheat your oven to 200°C (400°F) and bake the nuggets on a parchment-lined tray until golden and cooked through, about 15-20 minutes.
