Delicious Chicken Croquette Rolls (Risoles Rogut Ayam)

Ingredients:

  • Filling:

    • 3 potatoes, boiled and mashed
    • 1 carrot, grated
    • 100g boiled chicken breast, finely shredded
    • 2 tbsp all-purpose flour
    • Ground black pepper, to taste
    • Salt, to taste
    • 100ml milk
    • 2 cloves garlic, minced
    • 50g grated cheddar cheese
    • 2 tbsp cooking oil
  • Wrapper:

    • 250g all-purpose flour
    • 3 tbsp margarine, melted
    • 2 eggs
    • Salt, to taste
    • Water, as needed
    • 100g breadcrumbs, for coating

Steps:

  1. Prepare the Filling:

    • In a bowl, mix together the mashed potatoes, all-purpose flour, and milk until smooth and free of lumps.
    • Sauté minced garlic until fragrant, then add the potato mixture along with grated cheese, black pepper, shredded chicken. Stir quickly until thickened. Remove from heat and set aside.
  2. Make the Wrapper:

    • Combine all-purpose flour, salt, one beaten egg, and enough water to form a smooth, lump-free batter. Stir in melted margarine until well incorporated.
  3. Assembly:

    • Heat a non-stick pan over medium heat. Pour a ladle of batter onto the pan and spread evenly to form a thin wrapper. Cook until set.
    • Place a portion of the chicken filling in the center of each wrapper. Fold over the sides to enclose the filling and form a roll.
  4. Coating:

    • Dip each roll into the remaining beaten egg, then coat evenly with breadcrumbs. Repeat for a thicker coating.
  5. Frying:

    • Heat cooking oil in a pan over medium heat. Fry the rolls until golden brown and crispy.
  6. Serving:

    • Serve the chicken croquette rolls hot, accompanied by bird’s eye chili peppers or chili sauce for dipping.
