Ekkado Ayam: A Delightful Indonesian Snack

Ingredients:

  • 400 grams minced chicken
  • Boiled quail eggs (quantity as needed)
  • Tofu skin sheets, cut into 10×10 cm squares
  • 1 tablespoon all-purpose flour
  • Chives or green onions (for tying)
  • 1 teaspoon soy sauce
  • Salt, pepper, and sugar to taste
  • 1 egg white

Instructions:

  1. Prepare the Mixture: In a mixing bowl, combine the minced chicken with the egg white, all-purpose flour, soy sauce, salt, sugar, and pepper. Stir until all ingredients are well incorporated and the mixture is smooth.

  2. Assemble the Ekkado: Lay out the tofu skin squares on a flat surface. Place a spoonful of the chicken mixture in the center of each square. Add a boiled quail egg on top of the mixture.

  3. Wrap and Tie: Gently fold the edges of the tofu skin over the chicken and quail egg, forming a neat package. Secure the package by tying it with chives or green onions. Be careful not to tie too tightly to avoid tearing the tofu skin.

  4. Steam the Packages: Arrange the wrapped packages in a steamer. Steam over medium heat for about 15-20 minutes, or until the chicken is fully cooked and the tofu skin is tender.

  5. Cool and Fry: Once steamed, remove the packages from the steamer and allow them to cool slightly. Carefully remove the chives or green onions. Heat oil in a pan over medium heat and fry the packages until they are golden brown and crispy.

  6. Serve: Drain the fried Ekkado on paper towels to remove excess oil. Serve hot with your favorite dipping sauce, such as sambal or tomato sauce.
