- Tofu skin sheets, cut into 10×10 cm squares
- 1 tablespoon all-purpose flour
- Chives or green onions (for tying)

- 1 egg white

Prepare the Mixture: In a mixing bowl, combine the minced chicken with the egg white, all-purpose flour, soy sauce, salt, sugar, and pepper. Stir until all ingredients are well incorporated and the mixture is smooth.

Assemble the Ekkado: Lay out the tofu skin squares on a flat surface. Place a spoonful of the chicken mixture in the center of each square. Add a boiled quail egg on top of the mixture.
