Ingredients:

For the Chicken Fillet:

  • 1/2 kg chicken fillets (cut into your preferred size)
  • 1 large egg
  • 2 packets crispy chicken flour (I used Kobe, 75g each)

For the BBQ Sauce:

  • 3 cloves garlic (minced)
  • 9 tablespoons Del Monte BBQ sauce
  • 5 tablespoons hot sauce
  • 3 tablespoons tomato ketchup
  • 3 tablespoons oyster sauce
  • 3 small sachets of super spicy Bon Cabe (adjust to taste)
  • 5 tablespoons honey or 3 tablespoons sugar
  • 1 teaspoon ground black pepper
  • Oil, for frying

For the Cheese Sauce:

  • 100 ml plain UHT milk (I used Ultra Mini)
  • 50 g grated cheese (I used Cheddar)
  • Cheese powder (to achieve the desired color, I used Indofood brand)

Instructions:

  1. Prepare the Chicken Fillet:

    • Briefly boil the chicken fillets to remove any residual blood. After boiling, cut the fillets into your desired size.
    • Coat each piece of chicken fillet with the beaten egg, then dredge in the crispy chicken flour. Repeat the coating process twice for extra crunch.
    • Heat oil in a pan and fry the coated chicken fillets until golden and crispy. Drain excess oil on paper towels.
  2. Prepare the BBQ Sauce:

    • In a bowl, combine the Del Monte BBQ sauce, hot sauce, tomato ketchup, oyster sauce, and Bon Cabe. Mix well.
    • Heat oil in a skillet over medium heat. Sauté the minced garlic until fragrant.
    • Add the crispy chicken fillets to the skillet, then pour in the BBQ sauce mixture. Stir well to ensure the chicken is evenly coated with the sauce.
  3. Prepare the Cheese Sauce:

    • In a saucepan, combine the plain UHT milk and grated Cheddar cheese. Cook over medium heat, stirring constantly until the cheese melts and the sauce thickens.
    • Add cheese powder to the sauce to achieve your desired color and flavor. Continue stirring until well combined and the sauce reaches a creamy consistency. Be careful not to let it burn.
  4. Serve:

    • Plate the crispy chicken fillets and drizzle generously with the warm cheese sauce. Enjoy immediately for the best taste and texture.
