Saus Sambal Ayam Fillet: A Savory and Spicy Delight

Ingredients:

  • For the Chicken:

    • 1 fillet of chicken breast (dada ayam)
    • 1 egg
    • 4 tablespoons cornstarch (tepung maizena)
    • Salt, to taste
  • For the Sauce:

    • 1 onion, finely chopped
    • 3 cloves garlic, minced
    • 1 tomato, diced
    • 1-2 stalks green onions, thinly sliced
    • 1 tablespoon palm sugar, finely sliced (gula merah)
    • 1 teaspoon mushroom bouillon (kaldu jamur)
    • 2 tablespoons chili sauce (saos sambal)
    • 2 tablespoons oyster sauce (Saori saos tiram)
    • Ground black pepper, to taste
    • Salt, to taste
    • Oil, for frying and sautéing

Instructions:

  1. Prepare the Chicken:

    • Cut the chicken fillet into bite-sized cubes. Rinse thoroughly and pat dry with paper towels. Season with salt and let sit for 10 minutes to absorb the flavors.
    • In a bowl, beat the egg and mix it with the chicken pieces. Stir well to coat the chicken evenly.
    • Add the cornstarch to the chicken mixture and toss until each piece is well-coated. This will help create a crispy coating when fried.
  2. Fry the Chicken:

    • Heat oil in a pan over medium-high heat. Once hot, add the coated chicken pieces in batches. Fry until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.
  3. Prepare the Sauce:

    • In a separate pan, heat a little oil over medium heat. Add the finely chopped onion and minced garlic. Sauté until fragrant and translucent.
    • Add the chili sauce and oyster sauce to the pan, stirring well to combine. If the sauce is too thick, add a splash of water and cook until it starts to bubble.
    • Stir in the diced tomato and sliced green onions. Cook for a few minutes until the tomatoes begin to soften.
    • Add the mushroom bouillon and palm sugar. Adjust the seasoning with salt and black pepper to taste. Stir well to ensure the sugar and bouillon are fully dissolved and incorporated into the sauce.
  4. Combine and Serve:

    • Add the fried chicken pieces to the sauce, stirring gently to coat the chicken thoroughly with the spicy, savory sauce.
    • Cook for an additional 2-3 minutes to allow the flavors to meld together.
    • Serve hot, garnished with extra green onions if desired.
