  • Bread crumbs
  • All-purpose flour
  • Cornstarch (dissolved in water)
  • Teriyaki sauce
  • Black pepper
  • Salt

Instructions:

For the Teriyaki Sauce:

  1. Sauté Garlic and Onion: In a pan, sauté the minced garlic and chopped onion until fragrant and golden.
  2. Add Water: Pour in water and bring it to a boil.
  3. Incorporate Teriyaki Sauce: Add the teriyaki sauce to the boiling water, stirring continuously.
  4. Thicken with Cornstarch: Pour the dissolved cornstarch into the sauce, stirring until it thickens and is well combined.
  5. Season: Add salt and black pepper to taste.

For the Chicken Katsu:

  1. Prepare the Chicken: Clean the chicken breast fillets thoroughly and pat them dry.
  2. Set Up Breading Stations: Prepare three separate bowls for the breading process:
    • Bowl 1: Beat eggs and season with a pinch of black pepper.
    • Bowl 2: Mix all-purpose flour and rice flour, also seasoning with a pinch of black pepper.
    • Bowl 3: Place bread crumbs, seasoned with a pinch of black pepper.
  3. Bread the Chicken:
    • First Dip: Coat the chicken fillets in the seasoned egg mixture.
    • First Flour Coat: Dredge the egg-coated chicken in the flour mixture.
    • Second Dip: Dip the floured chicken back into the egg mixture.

    • Final Egg Dip: Dip once more in the egg mixture.
    • Bread Crumb Coat: Finally, coat the chicken thoroughly with bread crumbs.
  4. Fry the Chicken: Heat oil in a pan over low heat. Fry the breaded chicken fillets until they are golden brown and crispy. Remove from the oil and drain on paper towels to remove excess oil.

Serving:

  1. Serve Hot: Plate the crispy chicken katsu and generously pour the teriyaki sauce over the top or serve on the side as a dipping sauce.
  2. Garnish and Enjoy: Garnish with finely chopped scallions or sesame seeds if desired and enjoy your homemade Chicken Katsu with Teriyaki Sauce.
