Instructions
-
Prepare the Breaded Chicken:
In a large zip-top bag, combine the bread crumbs and 1 1/2 cups of Parmesan cheese. Set aside. In another zip-top bag, mix together the flour with a pinch of salt and black pepper to taste. In a medium bowl, whisk the eggs until well-beaten. -
Heat the Skillet:
Preheat a large skillet over medium-high heat with a few tablespoons of oil. You should feel a good amount of heat when you place your hand a few inches above the skillet, but make sure the oil isn’t smoking. -
Coat the Chicken:
Take each chicken breast, one or two at a time, and first toss them in the flour mixture to coat evenly. Then dip them into the beaten eggs to ensure they are well coated. Finally, toss the chicken breasts into the breadcrumb and Parmesan mixture, making sure each piece is thoroughly covered. -
Sear the Chicken:
Carefully place the breaded chicken breasts into the hot skillet. Sear each side for about 1 minute, or until they are golden brown and crispy. Once seared, remove the chicken from the skillet and set it aside on a plate. -
Prepare the Sauce and Pasta:
While the chicken is resting, cook the spaghetti according to the package instructions. Drain the pasta and set it aside. In a 9″x13″ baking dish, combine the cooked spaghetti, crushed tomatoes, minced garlic, basil, and a pinch of salt and pepper. Stir well to mix all the ingredients evenly. -
Assemble the Dish:
Place the seared chicken breasts on top of the spaghetti mixture in the baking dish. Sprinkle the shredded mozzarella cheese generously over the chicken breasts. -
Bake:
Preheat your oven to 300°F (150°C). Place the baking dish in the oven and bake for 20 minutes, or until the cheese is melted and bubbly and the chicken is cooked through. -
Serve:
Once the chicken is golden and the cheese is beautifully melted, remove the dish from the oven. Allow it to rest for a few minutes before serving. Garnish with extra fresh basil if desired. Serve the Chicken Parmesan with a side of garlic bread or a fresh salad for a complete meal.
Tips for Success
- For an extra crispy coating, try double-dipping the chicken in the breadcrumb mixture for a thicker layer.
- If you’re looking for a more homemade touch, you can make your own marinara sauce with fresh tomatoes, garlic, and herbs.
- To lighten up the recipe, feel free to use a lighter mozzarella or skip the pasta and serve the chicken on a bed of zucchini noodles.
- Make sure not to overcrowd the skillet when searing the chicken; if necessary, cook the chicken in batches for the best result.
This recipe is perfect for a cozy dinner with the family, and it can easily be doubled or halved depending on your needs. Whether you’re looking for a quick weeknight dinner or a comforting dish for a special occasion, this Chicken Parmesan is sure to become a favorite in your home.
