Chicken Pop with Stir-Fried Sambel Bawang

Ingredients

For the Chicken:

  • 1/4 kg Chicken Breast, cut into cubes
  • Juice of 1 Lime
  • 1 1/2 packs All-Purpose Flour

For the Sambel Bawang (Shallot Chili Sauce):

  • 15 cloves Shallots
  • 1 clove Garlic
  • 3 Bird’s Eye Chilies (adjust to taste)
  • 1 Red Chili
  • 2 Tomatoes

Other Ingredients:

  • Cooking Oil
  • Salt
  • MSG (optional)
  • Sugar
  • Shrimp Paste (Terasi)

Instructions

  1. Preparing the Chicken:

    • Cut the chicken breast into cubes and wash thoroughly.
    • Marinate the chicken with lime juice and let it sit for 15 minutes.
  2. Preparing the Sambel Bawang:

    • While waiting for the chicken to marinate, prepare the sambel bawang. Slice the shallots, garlic, bird’s eye chilies, red chili, and tomatoes. Set aside.
  3. Battering the Chicken:

    • Prepare two separate bowls: one with wet batter (all-purpose flour mixed with water to a not too thin consistency) and another with dry all-purpose flour.
    • Rinse the marinated chicken cubes and dip them first in the wet batter, then coat them evenly with the dry flour.
  4. Frying the Chicken:

    • Heat cooking oil in a deep pan until it’s hot enough for frying.
    • Fry the battered chicken cubes until golden brown. Once done, drain the excess oil and set the chicken aside.
  5. Making the Sambel Bawang:

    • Heat some oil in a pan and sauté the sliced shallots, garlic, chilies, and tomatoes until fragrant and cooked through.
    • Season the mixture with salt, MSG (if using), sugar, and shrimp paste. Adjust the seasoning to taste.
  6. Combining Chicken and Sambel Bawang:

    • Reduce the heat to low, add the fried chicken cubes to the sambel bawang, and stir until the chicken is well coated with the sauce.
  7. Serving:

    • Serve the Chicken Pop with Stir-Fried Sambel Bawang hot, accompanied by warm rice for a delightful meal.

Tips:

  • Adjust the spiciness by varying the amount of bird’s eye chilies according to your preference.
