Crispy Chicken Salad with Vinaigrette

Instructions

  1. Prepare the Vegetables
    Begin by washing the vegetables thoroughly. Peel the cucumbers using a vegetable peeler, removing their skins. Repeat this process for the carrots. Afterward, cut both the cucumbers and carrots in half, then slice them into thin strips about 0.5 cm wide.
    Slice the heirloom tomatoes in half lengthwise, and then cut them into strips approximately 0.5 cm wide.

  2. Make the Vinaigrette
    In a large mixing bowl, combine the white wine vinegar with a pinch of salt. While whisking, slowly drizzle in the extra virgin olive oil to emulsify the dressing. Add freshly ground black pepper to taste, then set the vinaigrette aside.

  3. Prepare the Chicken
    In a small bowl, beat the eggs and season with a pinch of salt. Cut the chicken breast into thin strips. Dip each strip of chicken into the egg mixture, then coat it evenly with the breadcrumbs, ensuring each piece is well covered.

  4. Fry the Chicken
    Heat the vegetable oil in a large pan or deep fryer to 170°C (340°F). To test the temperature, you can use a kitchen thermometer. Once the oil is hot, carefully add the chicken strips in batches. Fry the chicken for about 3-4 minutes, or until they are golden brown and crispy.
    Once fried, transfer the chicken strips onto a tray lined with paper towels to absorb excess oil.

  5. Assemble the Salad
    In a large salad bowl, combine the mixed salad greens, sliced carrots, cucumbers, and heirloom tomatoes. Drizzle with a little extra virgin olive oil and toss gently to combine, ensuring the vegetables are well coated with the dressing.

  6. Serve
    Arrange the crispy chicken strips on top of the salad and drizzle with the homemade vinaigrette. Serve immediately and enjoy a light, fresh, and satisfying meal.
