Healthy Chicken Sempol
Sempol ayam, or Indonesian chicken skewers, are a delightful and nutritious snack thatโs both flavorful and easy to prepare. This healthy version uses chicken breast for lean protein and is seasoned with aromatic garlic, fresh scallions, and a blend of savory spices. Letโs dive into how to make these delicious sempol ayam.

Ingredients:
- 500 grams chicken breast, finely ground
- 6 cloves garlic, minced
- 8 tablespoons tapioca flour
- 1/2 teaspoon ground black pepper
- 1 tablespoon chicken bouillon powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 stalk scallion, finely chopped
- 50 ml ice water
- 2 large eggs
- Skewers (for grilling)
Instructions:

Prepare the Chicken Mixture:
- Place the ground chicken breast into a food processor. Add the minced garlic, chopped scallions, salt, sugar, black pepper, and chicken bouillon powder. Process until the mixture is smooth and well combined.

Incorporate the Liquid and Egg:
- With the processor running, gradually add the ice water and one of the eggs. Blend briefly until everything is well mixed. Stop the processor and transfer the mixture to a bowl.

Add the Flour:
- Stir in the tapioca flour until fully incorporated into the chicken mixture. Ensure that the mixture is smooth and holds together well.

Prepare the Skewers:
- Bring a pot of water to a boil. While waiting for the water to boil, shape the chicken mixture onto the skewers. Press down firmly to flatten and create a uniform thickness.

Cook the Sempol:
- Once the water is boiling, gently place the skewers into the pot. Cook until the sempol rise to the surface and are cooked through, about 5-7 minutes. Remove from the water and allow to cool.

Fry the Sempol:

In a bowl, beat the remaining egg and season with a pinch of chicken bouillon powder. Dip the cooled sempol skewers into the egg mixture, coating them evenly.

Heat oil in a pan over medium heat. Fry the skewers in batches, turning occasionally until they are golden brown and crispy. Drain on paper towels.
