Spicy Chicken Skin in Fermented Tomato Sauce

Ingredients:

  • 1/4 chicken skin
  • 5 shallots
  • 8 bird’s eye chilies
  • 2 cloves garlic, finely chopped
  • Fermented tomato sauce
  • Salt, to taste
  • Grated cheese

Instructions:

  1. Prepare the Chicken Skin:
    Heat oil in a pan and fry the chicken skin until crispy and dry. Once done, set the fried chicken skin aside.

  2. Prepare the Sauce:
    In the same pan, use the remaining oil to sauté the shallots, bird’s eye chilies, and garlic until fragrant and the shallots are soft.

  4. Combine and Simmer:
    Add the fried chicken skin to the pan, reducing the heat to low. Cook the mixture until the chicken skin is well-coated with the sauce and the flavors have melded together. Season with salt to taste.

  5. Finish and Serve:
    Taste the dish and adjust seasoning if necessary. Sprinkle grated cheese on top, stir to combine, and allow it to melt slightly. Serve hot and enjoy this deliciously spicy treat!
