For Chicken Seasoning:
- 1/2 tsp black pepper
- 1/2 tsp chicken seasoning powder (e.g., Royco)
- 1/2 tsp garlic powder
-
For Coating:
- 100 grams all-purpose flour
- 1/2 tsp black pepper
- 1/2 tsp chicken seasoning powder (e.g., Royco)
- 1/2 tsp garlic powder
- 1-2 eggs, beaten (optional)
- Cooking oil for frying
- Toasted sesame seeds, for garnish
- Carrots, potatoes, and green beans, steamed for sides
-
For Black Pepper Sauce:
- 2 tbsp oyster sauce
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/2 tbsp chicken seasoning powder (e.g., Royco)
- 1/2 tbsp sugar
- 1/2 tsp ground black pepper
- Cornstarch slurry (1 small glass of water mixed with 1 tbsp cornstarch)
Instructions:
-
Prepare the Chicken:
- Rinse the chicken breast fillets thoroughly and pat dry. You can use chicken thighs if preferred.
- Season with black pepper, garlic powder, and chicken seasoning powder. Mix well to coat evenly. Allow the chicken to marinate in the refrigerator for 15 minutes to let the flavors meld.
-
Coat and Fry the Chicken:
- In a bowl, combine the all-purpose flour, rice flour, Royco, black pepper, and garlic powder. Mix well.
- Take each marinated chicken fillet, coat it in the flour mixture, then dip it in beaten egg (if using), and coat it again with the flour mixture to achieve desired thickness.
- Heat cooking oil in a frying pan over medium-high heat. Fry the chicken until golden brown and cooked through. Transfer to a plate lined with paper towels to drain excess oil.
-
Make the Black Pepper Sauce:
- In the same pan, sauté chopped onion and minced garlic until fragrant.
- Add water and stir in oyster sauce, sugar, Royco, and ground black pepper. Taste and adjust seasoning as needed.
- Stir in the cornstarch slurry gradually until the sauce thickens to your desired consistency. Remove from heat.
-
Prepare Sides:
- Cut carrots, green beans, and potatoes into bite-sized pieces. Steam or boil until just tender. Drain well.
-
Serve:
- Arrange steamed vegetables on a serving platter. Place the fried chicken on top and pour the black pepper sauce generously over the chicken.
- Garnish with toasted sesame seeds for added crunch and flavor.
