Ayam Goreng Saus Telur Asin – Chicken with Salted Egg Sauce

Ingredients:

  • 1 chicken breast
  • 5 salted egg yolks (cooked)
  • 1 1/2 cups cornstarch
  • 1 clove garlic
  • 10 kaffir lime leaves
  • Bon cabe (chili seasoning) to taste
  • Salt and pepper to taste
  • 1 egg
  • Oil for frying

Instructions:

  1. Prepare the Chicken:

    • Rinse and cut the chicken breast into bite-sized cubes. Set up two bowls: one with cornstarch and another with beaten egg. Season both the cornstarch and the egg with salt, pepper, and Bon cabe according to your taste preference.
  2. Coat the Chicken:

    • Begin by coating the chicken pieces in the cornstarch. Next, dip them into the beaten egg, and then coat again with cornstarch. This double coating ensures a crispy texture when fried.
  3. Fry the Chicken:

    • Heat oil in a pan over medium-high heat. Once hot, fry the coated chicken pieces until golden brown and crispy. Remove from the oil and drain on paper towels.
  4. Prepare the Salted Egg Sauce:

    • Separate the yolks from the salted eggs and mash them into a smooth paste. Combine the mashed yolks with 3 tablespoons of milk and mix well until smooth.
    • Finely chop the garlic and slice the kaffir lime leaves. Sauté the garlic and kaffir lime leaves in a pan with a bit of oil until fragrant.
    • Add the salted egg mixture to the pan and cook, stirring continuously, until the sauce thickens to your desired consistency.
  5. Serve:

    • Arrange the fried chicken on a serving plate. Pour the salted egg sauce over the chicken. For an extra kick, sprinkle additional Bon cabe if desired.
    • You can also serve this dish with a fried egg on top of steamed rice for a complete meal.
