Ayam Goreng Saus Telur Asin – Chicken with Salted Egg Sauce
Ingredients:

- 1 chicken breast
- 5 salted egg yolks (cooked)
- 1 1/2 cups cornstarch
- 1 clove garlic
- 10 kaffir lime leaves
- Bon cabe (chili seasoning) to taste
- Salt and pepper to taste
- 1 egg
- Oil for frying
Instructions:
-
Prepare the Chicken:
- Rinse and cut the chicken breast into bite-sized cubes. Set up two bowls: one with cornstarch and another with beaten egg. Season both the cornstarch and the egg with salt, pepper, and Bon cabe according to your taste preference.
-
Coat the Chicken:
- Begin by coating the chicken pieces in the cornstarch. Next, dip them into the beaten egg, and then coat again with cornstarch. This double coating ensures a crispy texture when fried.
-
Fry the Chicken:
- Heat oil in a pan over medium-high heat. Once hot, fry the coated chicken pieces until golden brown and crispy. Remove from the oil and drain on paper towels.
-
Prepare the Salted Egg Sauce:
- Separate the yolks from the salted eggs and mash them into a smooth paste. Combine the mashed yolks with 3 tablespoons of milk and mix well until smooth.
- Finely chop the garlic and slice the kaffir lime leaves. Sauté the garlic and kaffir lime leaves in a pan with a bit of oil until fragrant.
- Add the salted egg mixture to the pan and cook, stirring continuously, until the sauce thickens to your desired consistency.
-
Serve:
- Arrange the fried chicken on a serving plate. Pour the salted egg sauce over the chicken. For an extra kick, sprinkle additional Bon cabe if desired.
- You can also serve this dish with a fried egg on top of steamed rice for a complete meal.
Enjoy your crispy, flavorful chicken with a rich and creamy salted egg sauce!
