Chicken Salted Egg Recipe

Ingredients:

  • 500g chicken, cut into small pieces
  • 1 cup all-purpose flour
  • 1/2 cup rice flour
  • 2 duck egg yolks
  • 1/2 cup milk
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 4 shallots, minced
  • 5 kaffir lime leaves, finely sliced
  • 2 red chilies, sliced
  • Salt, to taste
  • Black pepper, to taste
  • Cooking oil, for frying

Instructions:

  1. Prepare the Chicken: In a large bowl, mix together the all-purpose flour and rice flour. Gradually add cold water, whisking until you have a smooth batter. Dip each piece of chicken into the batter, ensuring it is well-coated. Heat oil in a deep pan or skillet over medium-high heat. Fry the chicken pieces in batches until golden brown and crispy. Remove from oil and set aside on paper towels to drain excess oil.

  2. Prepare the Salted Egg Sauce: In a separate bowl, mash the duck egg yolks with milk until well combined.

  3. Cook the Aromatics: Heat a little oil in a pan over medium heat. Add the sliced onion, minced garlic, and minced shallots. Sauté until the onions are translucent and fragrant. Add the finely sliced kaffir lime leaves and red chilies, and cook for another minute.

  4. Combine the Sauce: Stir in the mashed duck egg yolk mixture. Cook, stirring frequently, until the sauce thickens and becomes creamy. Season with salt and black pepper to taste. Adjust the seasoning if necessary.

  5. Finish the Dish: Add the fried chicken pieces to the sauce, tossing gently to ensure all the chicken is well-coated. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

  6. Serve: Garnish with extra chopped chilies or herbs if desired. Serve hot, ideally with steamed rice or as part of a larger meal.
