Crispy Chicken with Salted Egg Sauce
Ingredients
For the Crispy Chicken:
- 1/2 whole chicken (cut into 6 pieces)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 5 tablespoons tapioca flour
For the Salted Egg Sauce:
- 3 salted egg yolks, cooked and mashed
- 2 cloves garlic, crushed and finely chopped
- 2 small red chilies, sliced
- 1 curly red chili, sliced
- 1/2 onion, sliced
- 1 green onion, sliced
- 100 ml UHT milk
- 1 teaspoon salt
- To taste: black pepper and sugar
- 3 tablespoons water
- Oil, for frying
Instructions
1. Prepare the Crispy Chicken:
- Begin by washing the chicken pieces thoroughly. Season with salt and black pepper, then let it sit for 10 minutes to allow the flavors to penetrate.
- Coat the chicken pieces evenly with tapioca flour, ensuring all surfaces are covered.
- Heat oil in a frying pan over medium to low heat. Fry the chicken pieces until golden brown and crispy. Remove from the pan and drain on paper towels.
2. Prepare the Salted Egg Sauce:
- In a small bowl, combine the mashed salted egg yolks with 3 tablespoons of water. Mix until smooth and well combined.
- In a separate pan, heat a little oil and sauté the garlic, sliced onions, and chilies until fragrant and slightly golden.
- Add the salted egg mixture to the pan and stir gently. Pour in the UHT milk, and season with salt, black pepper, and sugar to taste.
- Continue to cook the sauce until it thickens slightly, stirring occasionally.
- Add the sliced green onion and stir well. Cook for an additional minute or until the sauce is well incorporated and heated through.
3. Serve:
- Spoon the salted egg sauce over the crispy chicken pieces or serve it on the side for dipping.
