Crispy Chicken with Oyster Sauce and Mushrooms

Ingredients:

  • 2 chicken fillets (approximately 1 whole thigh and 1 breast, cut into bite-sized pieces)
  • 1.5 cans of button mushrooms
  • All-purpose flour, as needed
  • Tapioca flour, as needed
  • Oyster sauce, to taste
  • Sweet soy sauce, to taste
  • Soy sauce, to taste
  • Black pepper, to taste
  • Mushroom stock (non-MSG), to taste
  • 2 cloves of garlic, minced
  • 1/4 onion, finely chopped

Instructions:

  1. Prepare the Chicken: Cut the chicken into bite-sized pieces. Season the chicken pieces with salt, black pepper, and coat them with a mixture of tapioca flour and all-purpose flour. Mix thoroughly to ensure the chicken is evenly coated. Allow the chicken to marinate for about 15 minutes.

  2. Fry the Chicken: Heat a pan with oil. Once hot, dredge the marinated chicken pieces again in all-purpose flour and fry them in the pan until golden brown and crispy. Remove and set aside.

  3. Cook the Mushrooms: In the same pan, add a bit more oil if needed and sauté the minced garlic and chopped onion until they become translucent and fragrant. Add the button mushrooms and cook until they are tender.

  4. Add Sauces and Seasoning: Pour in the oyster sauce, sweet soy sauce, and soy sauce to taste. Stir well to combine. Add a splash of water to create a sauce and let it simmer for a few minutes.

  5. Season and Combine: Add mushroom stock to the sauce, adjusting the seasoning as needed. Return the fried chicken to the pan and toss everything together until the chicken is well-coated with the sauce and heated through.

  6. Serve: Once everything is well-mixed and the sauce is evenly distributed, serve the crispy chicken with mushrooms hot, garnished if desired.
