Crispy Chicken in Sweet and Sour Sauce

Ingredients:

  • 500 grams chicken breast, diced
  • 1/2 large onion, roughly chopped
  • 3 shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 2 tablespoons lime juice
  • 1/2 large tomato, seeded and diced
  • 100 ml water
  • Seasoning to taste
  • White sugar to taste
  • Ground black pepper to taste
  • 1 tablespoon oyster sauce
  • 2 tablespoons ketchup
  • 2 tablespoons chili sauce
  • 1 whole scallion (green onion), chopped
  • Oil for frying
  • 1 packet Kentucky-style seasoned flour (such as Sasa brand)

Instructions:

  1. Prepare the Chicken: Rinse the chicken breast thoroughly, then cut into bite-sized cubes. Season with ground black pepper, garlic, and salt. Allow to marinate for a few minutes.

  2. Prepare the Vegetables: Slice the garlic, tomato, shallots, and large onion. Chop the scallion and set aside.

  3. Coat the Chicken: Prepare the seasoned flour according to the instructions on the packet. Dip the marinated chicken cubes into the wet batter, then coat thoroughly with the seasoned flour. Let the coated chicken sit for a short while.

  4. Fry the Chicken: Heat enough oil in a pan for frying. Fry the coated chicken pieces until golden brown and crispy. Remove and drain on paper towels.

  5. Prepare the Sauce: In a separate pan, heat a small amount of oil suitable for sautéing. Add the garlic, tomato, shallots, and large onion. Sauté until fragrant.

  6. Make the Sauce: Add water, white sugar, ground black pepper, and seasoning to the sautéed vegetables. Stir to combine. Add the oyster sauce, ketchup, chili sauce, and lime juice. Mix well and cook until the sauce reduces slightly.

  7. Combine Chicken and Sauce: Add the fried chicken pieces to the sauce. Stir well to ensure the chicken is evenly coated and the flavors are well incorporated.

  8. Final Touches: Stir in the chopped scallion and cook for an additional minute.

  9. Serve: Transfer to a serving dish and enjoy while warm. This dish pairs beautifully with hot steamed rice.
