Chickpea and Spinach Fritters Recipe

Ingredients:

Kabuli Chana (White Chickpeas) 1 cup, drained
Spinach Leaves (Palak) 1 cup
Corn Flour 1/4 cup
Baking Powder 1/4 teaspoon
Cumin Seeds (Jeera) 1 teaspoon
Red Chilli Powder 1/4 teaspoon
Onion (finely chopped) 1/2 onion
Ginger (minced and peeled) 1 tablespoon
Salt and Pepper To taste
Sunflower Oil For pan frying

Instructions:

  1. Prepare the Chickpeas: Begin by soaking the Kabuli Chana (white chickpeas) in water for 8 hours. Once soaked, drain the water and transfer the chickpeas to a pressure cooker. Cook them under pressure for about 30 minutes, or until they are soft. Let the pressure release naturally. Once done, strain the water and grind the chickpeas to a coarse mixture.

  2. Prepare the Spinach: In a saucepan, add a little water and bring it to a boil. Add the spinach leaves and cook until wilted. Once cooked, strain all the water from the spinach and add it to the coarsely ground chickpea mixture.

  3. Season the Mixture: To the chickpea and spinach mixture, add the corn flour, baking powder, cumin seeds, red chilli powder, finely chopped onion, minced ginger, salt, and pepper. Mix everything well until the ingredients are evenly incorporated.

  4. Form the Fritters: Take a portion of the mixture and shape it into medium-sized fritters. Heat a flat tawa (griddle) over medium heat and add a teaspoon of sunflower oil. Carefully place the fritters on the tawa and cook them until they are golden brown on both sides. As they cook, gently flip the fritters to ensure they don’t break, as the mixture is soft. Add a teaspoon of oil at intervals to create a crispy layer.

  5. Serve: Once cooked, remove the fritters from the tawa and drain any excess oil on paper towels. Serve the Chickpea and Spinach Fritters hot as a delightful party appetizer.
