Cilok Telor (Indonesian Tapioca Dumplings with Egg)

Ingredients:

Ingredient Quantity
All-purpose flour 100 grams
Tapioca flour (sago) 350 grams
Ground white pepper 1/2 teaspoon
Ground black pepper 1 teaspoon
Salt 1 teaspoon
Sugar 1/2 teaspoon
Flavor enhancer (optional) To taste
Egg 1 whole
Ground coriander 1/2 teaspoon
Scallions (chopped) As needed
Garlic cloves 4 cloves
Skewers (for serving) As needed
Cooking oil For frying

Instructions:

  1. Prepare the garlic: Start by pounding or finely mincing the garlic cloves until smooth. Set aside.

  2. Mix the flours: In a mixing bowl, combine the all-purpose flour and tapioca flour. Gradually add hot water in small amounts while stirring the mixture. Continue mixing until the dough begins to come together.

  3. Add seasonings: Add the chopped scallions, ground pepper, ground coriander, sugar, salt, and a pinch of flavor enhancer, if using. Mix everything together until fully combined and the dough is smooth and pliable.

  4. Shape the cilok: Once the dough has reached the right consistency, shape it into small, round balls. You can make the cilok balls to any size you prefer.

  5. Boil the cilok: Bring a pot of water to a boil. Drop the shaped cilok balls into the boiling water. Let them cook until they float to the surface, indicating that they are done. Once they float, remove them with a slotted spoon and drain.

  6. Prepare the egg coating: In a small bowl, crack the egg and whisk it with a pinch of salt until well-beaten.

  7. Skewer and coat the cilok: Skewer the boiled cilok onto wooden or metal skewers. Dip each cilok skewer into the beaten egg, ensuring that they are evenly coated.

  8. Fry the cilok: Heat oil in a pan over medium heat. Once the oil is hot, carefully place the egg-coated cilok skewers into the oil. Fry them until they are golden and crispy on all sides.

  9. Serve: Once the cilok is fried to perfection, remove them from the oil and let them drain on paper towels. Serve hot and enjoy these delicious, savory Indonesian snacks!
