Golden Coconut Chicken (Ayam Serundeng)
Ingredients:
- 1 whole chicken, cut into pieces
- 1/4 coconut, grated
- 3 bay leaves
Spices:
- 1 finger-length turmeric, grated
- 2 finger-length galangal, grated
- 4 shallots
- 2 cloves garlic
- 3 candlenuts
- 1/2 tbsp coriander seeds
- Salt, to taste
- Water and cooking oil, as needed
Steps:

Prepare the Chicken:
Clean the chicken thoroughly and drain well. -
Prepare the Spice Paste:
Grind together turmeric, galangal, shallots, garlic, candlenuts, and coriander seeds into a smooth paste. -
Cooking Process:
- Heat a little oil in a pan and sauté the spice paste until fragrant. Add bay leaves and continue sautéing until wilted.
- Add water (enough to cover the chicken) and bring to a boil. Add the chicken pieces, stir well, and simmer until the liquid reduces. Once the chicken is tender, remove it from the pan and drain excess liquid, reserving it for later use.

Fry the Chicken:
- Heat oil in a separate pan and fry the chicken pieces until golden brown. Once cooked through, remove and set aside.

Prepare the Coconut Topping:
- Reheat the reserved cooking liquid in the pan. Add the grated coconut and toast until fragrant and golden brown.
- Return the fried chicken to the pan with the coconut. Stir well until the chicken is coated and the flavors are well combined. Remove from heat.
