To prepare these delectable fish burgers, start by cleaning the cod fillets. Rinse them thoroughly under cold water, ensuring all excess moisture is removed using a kitchen towel. Use tweezers to remove any small bones, and then cut the fillets into small chunks.

Next, place the chopped fish into a food processor and pulse it until you achieve a finely minced, uniform texture. This will form the base of your burger mixture. Transfer the minced cod into a large mixing bowl and season generously with salt and pepper. Add the chopped parsley, lemon zest, and thyme to the mixture for added flavor. Stir everything together well, using a fork, until the seasonings are evenly incorporated into the fish.

Now, prepare a clean surface or a large cutting board and line it with a piece of parchment paper. Using a spoon, scoop a portion of the fish mixture and place it inside a round mold (7 cm in diameter). Gently press down on the mixture to form a compact patty shape, then carefully remove the mold to reveal the burger. Repeat this process with the remaining fish mixture, shaping it into four individual burgers.
