Cucumber and Hummus Finger Foods

Ingredients:

Cucumber 165g
Flatbreads (Piadine) 2
Fresh Chili Pepper 10g
Wild Fennel To taste
Cooked Chickpeas 100g
Tahini 30g
Lemon Juice 10g
Extra Virgin Olive Oil 10g
Salt To taste

Instructions:

  1. Prepare the Flatbreads:
    Begin by cutting out 16 small rounds from the flatbreads (piadine) using a 5 cm diameter cookie cutter. Heat a grill or skillet until very hot and toast the rounds for about 2 minutes on one side and 1 minute on the other side, then set them aside to cool.

  2. Slice the Cucumber:
    Cut the cucumber into 1 cm thick slices, ensuring to keep the skin on for added texture and flavor.

  3. Prepare the Hummus:
    In a food processor, combine the cooked chickpeas and tahini. Add a pinch of salt and the fresh lemon juice. Blend until smooth and creamy, adjusting the consistency by adding a bit of water if needed.

  4. Prepare the Chili:
    Finely chop the fresh chili pepper, removing the seeds for less heat (or keeping them if you prefer a spicier kick).

  5. Assemble the Finger Foods:
    Place a cucumber slice on top of each toasted flatbread round. Add a teaspoon of the creamy hummus on top of each cucumber slice.

  6. Garnish and Serve:
    Sprinkle the finely chopped fresh chili on top and garnish with a few fennel fronds for a delicate herbaceous touch.
