Instructions

  1. Prepare the Dals: Begin by soaking the chana dal and urad dal for 30 minutes in water. After soaking, grind them together into a thick, smooth batter, adding as little water as possible to achieve the right consistency. Season with salt to taste.

  2. Add Vegetables and Oats: Finely chop the onions, green chilli, garlic, cabbage, and coriander leaves. Grate the carrot. Add these fresh vegetables and the instant oats to the ground dal batter. Mix everything together well, ensuring the oats and vegetables are evenly incorporated. Taste the mixture and adjust the salt or spice levels as needed.

  3. Cook the Vada: Heat a kuzhi paniyaram pan and lightly grease it with a drop of oil to coat each well. Once the pan is hot, scoop a portion of the batter into each well using a scoop spoon. Cover the pan and let the vadas cook, steaming them until the top part is cooked through. This will take about 3-4 minutes.

  4. Flip the Vada: Once the top of the vada has cooked and firmed up, use a small spoon to gently flip each vada. Drizzle a little more oil around the edges of the pan to help them crisp up. Let the vadas cook on the other side for an additional 3-4 minutes, until both sides are golden brown and crispy.

  5. Test for Doneness: To check if the vada is fully cooked, insert the back of a spoon or a knife into the center of one. If it comes out clean, the vada is ready. Repeat this process with the remaining batter.
