These dumplings, or “little peas,” are not harvested from a field but lovingly made from scratch in the kitchen, just as Grandma used to make. When combined with a hearty, flavorful broth, this dish is perfect for warming up on a chilly day.

Ingredients

For the Backerbsen:

  • 3 1/2 tablespoons chives, finely chopped
  • 1/3 cup milk
  • 1/2 cup all-purpose flour
  • 1 3/4 cups shortening, divided
  • 2 large eggs
  • 1 teaspoon salt

Instructions

  1. Prepare the Backerbsen:

    2. In a separate bowl, beat the eggs and gradually fold them into the batter until fully incorporated.
    3. Heat 1 1/2 cups of shortening in a deep fryer or heavy pan to 350°F (175°C). You need enough shortening to submerge the dumplings for even frying.
    4. Transfer the batter to a pastry tube or a piping bag fitted with a small round tip.
    5. Squeeze out small drops of batter, about the size of a pea, into the hot shortening. Fry in batches, being careful not to overcrowd the pan.
    6. Fry the dumplings until they turn a golden brown color and expand to about the size of a marble, usually taking 2 minutes or so per batch.
    7. Use a sieve to remove the dumplings from the shortening and let them drain on paper towels. Continue until all the batter is used.

    1. Bring the vegetable or chicken broth to a rolling boil in a large pot over medium-high heat.
    2. Once boiling, remove the pot from heat.
    3. Gently add the Backerbsen to the hot broth and cover the pot. Let it sit for 3 to 5 minutes to allow the flavors to meld and the dumplings to soften slightly.
  3. Serve:

    1. Ladle the soup into bowls and garnish with freshly chopped chives.
    2. Serve hot and enjoy the comforting blend of savory broth and crispy, golden dumplings.
