This delightful “Pea” Soup is a charming take on traditional pea soup, featuring crispy, golden brown deep-fried dumplings known as Backerbsen. These dumplings, or “little peas,” are not harvested from a field but lovingly made from scratch in the kitchen, just as Grandma used to make. When combined with a hearty, flavorful broth, this dish is perfect for warming up on a chilly day.
Ingredients
For the Backerbsen:
- 3 1/2 tablespoons chives, finely chopped
- 1/3 cup milk
- 1/2 cup all-purpose flour
- 1 3/4 cups shortening, divided
- 2 large eggs
- 1 teaspoon salt

Prepare the Backerbsen:
- Begin by making the Backerbsen batter. In a mixing bowl, combine the finely chopped chives, milk, flour, and salt. Mix well until smooth.
- In a separate bowl, beat the eggs and gradually fold them into the batter until fully incorporated.
- Heat 1 1/2 cups of shortening in a deep fryer or heavy pan to 350°F (175°C). You need enough shortening to submerge the dumplings for even frying.
- Transfer the batter to a pastry tube or a piping bag fitted with a small round tip.
- Squeeze out small drops of batter, about the size of a pea, into the hot shortening. Fry in batches, being careful not to overcrowd the pan.
- Fry the dumplings until they turn a golden brown color and expand to about the size of a marble, usually taking 2 minutes or so per batch.
- Use a sieve to remove the dumplings from the shortening and let them drain on paper towels. Continue until all the batter is used.
- Allow the Backerbsen to cool while you prepare the soup.
