Ingredients:

Quantity Ingredient
2 cups Milk
2 cups Flour
2 tsp Baking Powder
1 tsp Salt
1/2 cup Melted Butter
1/3 cup Sugar
2 Eggs (separated)

Instructions:

  1. Preheat Waffle Maker: Preheat your waffle maker and set the oven temperature to “warm” so you can keep your waffles warm while the others are cooking.

  2. Mix Ingredients: In a large mixing bowl, combine milk, flour, baking powder, salt, melted butter, sugar, and egg yolks.

  3. Beat Egg Whites: Using hand-held electric beaters, beat the egg whites on low until moistened. Then increase mixer speed to medium, mixing until smooth.

  4. Fold in Egg Whites: Gently fold in the beaten egg whites by hand until well incorporated into the batter.

  5. Cook Waffles: Pour 1/2 cup (125ml) of batter over the preheated waffle grids. Close the waffle maker gently and bake until steam no longer escapes, about 3-5 minutes.

  6. Keep Warm: Remove waffle with a fork and place it on a baking sheet to keep warm in the oven while you cook the remaining waffles.

  7. Garnish and Serve: Garnish the waffles as desired and serve them hot!

Variations:

  1. Pecan or Macadamia Nut Waffles: Sprinkle 1 tablespoon (15ml) of finely chopped nuts (your favorite) over preheated waffle grids. Pour 1/2 cup of batter over nuts and cook as directed.

  2. Bacon Waffles: Cook bacon strips separately. Pour 1/2 cup of batter over grids, then lay one bacon strip cut in half over the batter and close. Bake as directed.

  3. Cheese Waffles: Fold 1 1/2 cups (375ml) shredded cheddar cheese into the batter. Bake as directed.

  4. Blueberry Waffles: Fold 2 cups (500ml) fresh blueberries into the batter. Pour 3/4 cup (200ml) of batter over the grids and bake until golden.

  5. Chocolate Chip Waffles: Fold 1 cup (250ml) chocolate chips into the batter. Bake as directed.
