Crispy Dory Steak with Teriyaki Sauce
Ingredients:
For the Dory Steak:
- 250 g Dory fillet
- 100 g all-purpose flour
- 50 g cornstarch
- 1 large egg
- 1 clove garlic, minced
- Salt and pepper to taste
- Bread crumbs (or panko breadcrumbs)
- Vegetable oil, for frying
For the Teriyaki Sauce:

- 2 cloves garlic, minced
- 1/2 onion, finely chopped
- 5 tablespoons teriyaki sauce
- 2 tablespoons oyster sauce
- 3 tablespoons chili sauce (or tomato sauce)
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 tablespoon cornstarch, dissolved in water
- Water, as needed
- Salt, pepper, and sugar to taste

Prepare the Dory Fillet:
- Clean the dory fillet thoroughly, then cut it into pieces according to your preference. Season the fish with salt, pepper, and minced garlic. Let it marinate for 15 minutes.

Prepare the Breading:
- In a separate bowl, combine the all-purpose flour and cornstarch. Season with a pinch of chicken stock powder and black pepper.
- Beat the egg in another bowl.

Bread the Fish:
- Dredge each piece of marinated fish in the flour-cornstarch mixture, ensuring it is well-coated.
- Dip the floured fish into the beaten egg, then coat it with bread crumbs or panko.
- Repeat the process until all the fish pieces are coated.

Fry the Fish:
- Heat vegetable oil in a frying pan over medium heat. Fry the coated fish pieces until they are golden brown and crispy. Drain on paper towels to remove excess oil.

Make the Teriyaki Sauce:
- In a separate pan, sauté the minced garlic and chopped onion until fragrant.
- Add about 100 ml of water to the pan and stir in the teriyaki sauce, oyster sauce, chili sauce, and sweet soy sauce.
- Bring the mixture to a simmer, then stir in the dissolved cornstarch to thicken the sauce. Continue to cook, stirring frequently, until the sauce reaches your desired consistency.
- Season with salt, pepper, and sugar to taste.

- Pour the teriyaki sauce over the crispy dory fillets. Serve hot and enjoy your delicious meal!
