Crispy Lumpia Bihun Telur (Egg and Vermicelli Spring Rolls)

Ingredients:

  • 15 sheets of spring roll wrappers
  • 4 large eggs
  • 3 scallions
  • 1 clove garlic
  • 1 small package of vermicelli noodles (or substitute with bean thread noodles)
  • 1 ½ packages of beef-flavored seasoning
  • Cooking oil

Instructions:

  1. Prepare the Vermicelli:
    Begin by soaking the vermicelli noodles in water according to the package instructions until they become tender. Drain well and set aside.

  2. Prepare the Aromatics:
    Finely chop the scallions and garlic.

  3. Prepare the Egg Mixture:
    In a bowl, crack the eggs and add the beef-flavored seasoning. Whisk together until well combined.

  4. Assemble the Spring Rolls:
    Take a sheet of spring roll wrapper and place a small amount of the soaked vermicelli in the center. Add approximately 2 tablespoons of the egg mixture over the vermicelli.

  5. Roll the Lumpia:
    Fold the sides of the wrapper over the filling, then roll up tightly to seal the edges.

  6. Fry the Lumpia:
    Heat a generous amount of cooking oil in a frying pan over medium heat. Fry the prepared spring rolls in batches, turning occasionally, until they are golden brown and crispy.

  7. Serve:
    Once cooked, remove the lumpia from the pan and drain on paper towels. Serve hot and enjoy!
