Crispy Telur Recipe

Ingredients:

  • 3 large eggs
  • Salt, to taste
  • 5 tablespoons tapioca flour
  • Bread crumbs
  • 2 stalks green onions, finely chopped
  • 2 tablespoons celery, finely chopped
  • Vegetable oil, for frying
  • Peanut sauce (optional, for serving)

Instructions:

  1. Prepare the Egg Mixture:

    • In a bowl, crack 2 eggs and whisk them until well combined.
    • Add the finely chopped green onions, celery, tapioca flour, and a pinch of salt. Stir until the mixture is smooth and the ingredients are evenly distributed.
  2. Fry the Egg Mixture:

    • Heat vegetable oil in a frying pan over medium heat until it is hot.
    • Pour the egg mixture into the hot oil, spreading it out to form a thin layer. Cook until the egg is just set and lightly golden, being careful not to overcook it. This should take about 2-3 minutes.
    • Once cooked, remove the egg from the pan and place it on a cutting board. Cut it into your desired shape (squares or strips work well).
  3. Prepare for Coating:

    • In a separate bowl, beat the remaining egg with a small pinch of salt.
    • Dip each piece of the cooked egg into the beaten egg, ensuring it is well coated.
  4. Bread the Egg Pieces:

    • Roll each piece of egg in bread crumbs until fully covered.
  5. Fry the Coated Egg Pieces:

    • Heat additional vegetable oil in the pan over medium heat.
    • Fry the breaded egg pieces in batches until they are golden brown and crispy, about 2-3 minutes per side.
    • Remove the crispy eggs from the pan and drain them on a paper towel-lined plate to remove excess oil.
  6. Serve:

    • Arrange the crispy telur on a serving plate.
    • Drizzle with peanut sauce or serve with your preferred dipping sauce.
