Crispy Fried Egg Patties (Telur Dadar Goreng Tepung)

For the dipping batter:
- 1 large egg, beaten

- 2 tablespoons all-purpose flour
- 3 tablespoons rice flour
- Ground black pepper, to taste
- Seasoning powder (such as Masako or Royco), to taste

Prepare the Egg Mixture:
- In a bowl, beat 2 large eggs and mix in the thinly sliced green onion, if using. Season with salt and seasoning powder to taste. Set aside.

Preheat the Pan:
- Heat a non-stick frying pan over medium heat and add about 3 tablespoons of vegetable oil. Allow the oil to warm until it’s just starting to shimmer but is not smoking.

Cook the Eggs:
- Pour half of the egg mixture into the pan. Immediately use two spatulas to press the egg mixture together (place the back sides of the spatulas together) to form a triangular shape. Note: For ease, you can pour all of the egg mixture at once, but be careful to avoid breaking the egg patty.

Shape and Cook the Patty:
- Continue pressing and shaping the egg mixture with the spatulas until it becomes firm and triangular. Flip the egg patty to cook both sides until golden brown and fully cooked through. Remove from the pan and drain on paper towels.

Repeat:
- Repeat the process with the remaining egg mixture. Ensure to drain the cooked patties on paper towels.

Prepare for Coating:
- Cut the cooked egg patties into smaller pieces. Dip each piece into the beaten egg, then coat evenly with the dry mixture of all-purpose flour, rice flour, ground black pepper, and seasoning powder. Press gently to ensure the flour mixture sticks well.

Fry the Coated Egg Patties:
- Heat a generous amount of vegetable oil in the pan over medium heat. Fry the coated egg pieces until they turn golden brown and crispy. Remove and drain on paper towels.
