Egg Tofu (Tahu Telur) Recipe
Ingredients:
- 3 pieces of firm tofu
- 2 large eggs (preferably 4 for better coverage)
- 100 grams of bean sprouts
- 1 large tomato
- Pre-made peanut sauce (or homemade if preferred)
- Salt and black pepper, to taste
- Oil for frying
- Optional: emping (melinjo crackers) for serving

Prepare the Tofu:
Begin by washing the tofu thoroughly and cutting it into your desired shapes. Heat oil in a frying pan over medium heat, then fry the tofu pieces until they are golden brown and crispy. Remove the tofu from the pan and place it on a paper towel to drain excess oil. -
Prepare the Egg Mixture:
While the tofu is frying, crack the eggs into a bowl, season with a pinch of salt and black pepper, and beat well. For a richer coating, consider using 4 eggs instead of 2 to ensure the tofu is fully covered. -
Cook the Tofu with Eggs:
In the same pan used for frying the tofu, pour the beaten eggs over the tofu pieces. Allow the eggs to cook, then gently flip the tofu to cook the other side until it is golden and the egg is fully set. Remove from heat and set aside. -
Prepare the Bean Sprouts:
Briefly blanch the bean sprouts in boiling water for about 1-2 minutes, or until they are tender yet still slightly crunchy. Drain and set aside. -
Assemble the Dish:
Arrange the cooked tofu on a serving plate. Top with the blanched bean sprouts and slices of fresh tomato. Drizzle generously with peanut sauce for a flavorful finish. -
Serve:
Optionally, serve with emping or melinjo crackers on the side for added crunch and texture.
