For optimal freshness and to eliminate any risk of parasites, freeze the salmon at -18°C (0°F) for at least 96 hours. After freezing, allow it to thaw completely. Once thawed, check the salmon fillet carefully for any bones. Run your fingers over the surface, and if you detect any bones, use a pair of tweezers to remove them.

Cut the Salmon: Slice the salmon fillet into thin strips. Then, dice these strips into small cubes and place them in a bowl. Keep the bowl refrigerated while preparing the other ingredients.
