Instructions:
To make the delightful fortune cookies, the first step is to prepare the batter. In a mixing bowl, combine the egg whites and sugar. Whisk them together until the mixture is smooth and well blended. Next, pour in the extra virgin olive oil and vanilla extract, adding a touch of flavor to your cookies.
In a separate bowl, sift the all-purpose flour, rice flour, and cornstarch together to ensure there are no lumps. Gradually incorporate the dry ingredients into the egg mixture, stirring gently with a whisk to combine everything into a smooth batter. At this stage, add just a drop of water (about a teaspoon) to help bind the ingredients and create a slightly thick consistency for the dough. The batter should be thick but smooth.
Now, preheat your oven to 170°C (340°F) in static mode (no fan). While the oven is heating, prepare a baking sheet by lining it with parchment paper. If you have a silicone baking mat, it works even better for these cookies.
Once your baking sheet is ready, spoon a tablespoon of the cookie batter onto the paper and spread it evenly with the back of the spoon. Form a circle that is about 10 cm (4 inches) in diameter. You can prepare two circles on the baking sheet, leaving some space between them. Do not bake more than two cookies at a time, as the cookies need to be handled quickly when hot.
Place the baking sheet in the oven and bake for about 10 minutes. The baking time might vary slightly depending on the oven, so keep an eye on the cookies. The edges should turn golden and the surface should have a slight golden hue. Once they’re baked to perfection, take them out of the oven and immediately flip them over while they’re still soft and pliable.
At this point, place a fortune slip at the center of each cookie. Carefully fold the edges of the cookie over the paper to form a semi-circle, pressing gently with your fingers. To help achieve the iconic fortune cookie shape, use the edge of a cup to press down on the lower part of the cookie, gently folding the edges inward. Be sure to apply light pressure to ensure the seal holds.
After forming the cookies, place them into a muffin tin to allow them to cool and maintain their shape. The muffin tin will help hold the cookies upright as they cool down.
