Instructions

Step Instruction
1 In a large mixing bowl, combine the whole wheat flour and instant yeast. Stir briefly to mix the dry ingredients evenly.
2 Add the softened butter to the mixture. Work it into the flour and yeast, either with your hands or a wooden spoon, until the dough becomes soft and malleable.
3 Sprinkle in the salt and continue mixing the dough, ensuring it’s well incorporated. The dough should be smooth and pliable.
4 Transfer the dough onto a floured surface. Shape it into a thick log or cylinder. Using a bench scraper or knife, divide the dough into four equal parts.
5 Take each piece and flatten it using your hands. If the dough sticks, lightly dust with more flour until it’s manageable.
6 In a large frying pan, pour enough peanut oil to create a 2-cm depth and heat it to around 170°C (340°F).
7 Carefully fry each portion of dough one at a time for about 2 minutes on each side. Use a spatula to flip it gently without breaking the shape, ensuring it’s golden and crisp.
8 Once golden brown, remove the bannock from the oil and place them on paper towels to drain excess oil.
9 While still warm, sprinkle a little salt on top and serve immediately for the best crispy experience. Enjoy!

  • If you don’t have whole wheat flour, you can substitute it with all-purpose flour for a lighter texture.
