Ingredients:

  • 300 grams beef, cut into chunks
  • 2 crushed galangal roots
  • 3 bay leaves
  • 3 kaffir lime leaves
  • Ground Spices:
    • 2 shallots
    • 2 cloves garlic
    • 1 candlenut
    • 1/2 teaspoon coriander
    • 1 teaspoon salt
    • 1/2 teaspoon beef bouillon powder
    • 1/2 teaspoon tamarind
    • 1/2 piece palm sugar

Steps:

  1. Prepare the Beef: Rinse the beef chunks thoroughly and set aside.

  2. Grind the Spices: Use a mortar and pestle to grind the shallots, garlic, candlenut, coriander, salt, beef bouillon powder, tamarind, and palm sugar into a smooth paste.

  3. Marinate the Beef: Rub the ground spice paste over each piece of beef, ensuring all surfaces are well coated. Place the spiced beef chunks into a pressure cooker or a large pot.

  4. Add Aromatics: Add the crushed galangal, bay leaves, and kaffir lime leaves to the pot with the beef. Pour in approximately 400-600 ml of water, enough to cover the meat. Adjust the water amount based on the size of your pot.

  5. Cook the Beef: Cover and cook the beef in the pressure cooker for about 20 minutes, or until tender. If using a regular pot, simmer until the beef is thoroughly cooked and tender.

  6. Marinate Again: Once the beef is cooked and tender, remove it from the pot and let it cool slightly. Marinate the beef chunks with the remaining ground spice paste. Allow the beef to marinate for 30 minutes to absorb the flavors.

  7. Fry the Beef: Heat a bit of oil in a pan over medium heat. Fry the marinated beef chunks until they are browned and crispy on the outside.

  8. Serve: Enjoy the crispy, tender fried beef served with warm rice, sweet sambal, and fresh vegetables. It’s a perfect dish to delight your taste buds.
