Ingredients

Catfish fillets 1/2 kg
Optional shrimp (for variety) To taste
Instant batter mix (such as Sajiku) As needed
Egg 1 large
Oyster sauce 1 tbsp
Spicy Sauce Ingredients
Hot sauce (such as Belibis) 1-2 tbsp
Carrot 1, thinly sliced
Onion 1 small, sliced thin
Tomato 1, diced
Green onion 1 stalk, thinly sliced
Bird’s eye chilies 3, finely chopped
Large red chilies 2, sliced thinly
Salt To taste
Sugar To taste
Water 1/2 cup

Instructions

  1. Prepare the Fish:

    • Clean the catfish thoroughly and cut each fillet into two portions.
    • Crack the egg into a small bowl and beat it well.
    • Dredge the fish in the instant batter mix, then dip it in the beaten egg, and finally coat it in the batter mix once again. This double-coating ensures a crispy texture.
  2. Fry the Fish:

    • In a deep skillet or pan, heat oil over medium-high heat.
    • Fry the coated catfish pieces until golden and crispy. Remove from oil and set aside on paper towels to drain any excess oil.
  3. Prepare the Spicy Sauce:

    • Thinly slice the onion, bird’s eye chilies, and large red chilies.
    • Slice the carrot, green onion, and tomato.
    • In a separate pan, heat a small amount of oil over medium heat. Sauté the sliced onion until translucent.
    • Add the chilies and cook for a minute, then add the carrot and green onion, cooking just until slightly softened.
    • Season with salt and sugar as desired. Pour in the water and bring the sauce to a gentle boil, stirring occasionally.
    • Taste and adjust seasonings as needed for a balanced sweet, salty, and spicy flavor.
  4. Serve:

    • Pour the spicy sauce over the fried catfish and garnish with additional sliced green onions, if desired. Enjoy your crispy fried catfish with spicy sauce!
