Title: Simple Petis Sauce Fried Chicken

Ingredients:

  • 1/2 chicken breast
  • Seasonings:
    • 5 shallots
    • 2 cloves garlic
    • 5 large red chilies
    • A small piece of kencur (aromatic root)
    • A small amount of shrimp paste (terasi)
    • 1/4 cup water
    • 1 tablespoon brown sugar
    • 1 tablespoon petis (fermented shrimp paste)
    • All-purpose flour for coating (or use Sasa brand mixed flour for fritters)
    • Salt, to taste

Instructions:

  1. Prepare the Seasonings: Begin by grinding all the seasonings except for the petis and brown sugar into a fine paste. Set this paste aside.

  2. Prepare the Chicken: Clean the chicken breast thoroughly and cut it into small pieces according to your preference.

  3. Coat the Chicken: Dredge the chicken pieces in the all-purpose flour or the Sasa brand fritter flour, ensuring they are evenly coated.

  4. Fry the Chicken: Heat oil in a pan over medium heat. Fry the coated chicken pieces until they turn a golden brown color. Once done, remove the chicken from the oil and set it aside.

  5. Prepare the Sauce: In the same pan, add a little oil if needed and sauté the ground seasoning paste until it becomes fragrant. Add a small amount of water and bring it to a boil.

  6. Make the Petis Sauce: Stir in the brown sugar and petis. Allow the mixture to simmer until the sugar dissolves and the sauce thickens slightly.

  7. Combine Chicken and Sauce: Add the fried chicken pieces to the sauce, stirring well to ensure each piece is coated evenly.

  8. Serve: Once the chicken is well-coated and the sauce has thickened to your liking, remove from heat. Serve the chicken hot, garnished if desired.
